Hey guys, this is a general recipe request. I need to expand my cooking repertoire and figured I'd come to you guys on what you like/know/make often, so.
Only requirements are:
No onions
No mushrooms
Preferably under $20 to make
Can feed a family of four
And if I feel ambitious enough, maybe I'll keep a log of how each one goes. With pictures and stuff. Because that's how I roll or something.
I just need a goddamn distraction from life, really

Ingredients:
For batter:
2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt (or eyeball it; I'm never exact with salt and never use the full amount--but do use the full amount if you use unsalted butter)
1/2 cup (1 stick) butter (softened)
1 egg
app. 3/4 milk (see directions)
1 1/2 tsp vanilla (or more if you'd like)
app. 1 tsp cinnamon
For streusel stuff:
1/2 cup flour
1/2 cup white sugar
1/2 cup brown sugar (packed)
1/4 cup (half stick) butter (softened)
2 tsp cinnamon (or more)
Optional: mini semi-sweet chocolate chips
Hardware:
2 bowls (one mixing one if you have a mixer, and a comparable sized one)
Pastry cutter
Measuring cups and spoons
Scrapper
Directions:
1. Preheat to 350F. Grease and flour 9x13 pan (or 10x10 round).
2. In one large bowl, combine the dry ingredients for the batter (the flour, white sugar, baking powder, and salt) and cut in the 1/2 cup of softened butter until the butter is in small pieces and well mixed with the rest. If you have a mixer, put this into the mixing bowl, sprinkle on a bit of cinnamon and set aside for now.
3. In the original bowl, put in all the ingredients for the streusel (the flour, white and brown sugars, cinnamon) and cut in the 1/4 cup of softened butter until it's well mixed. (Do not add chocolate chips yet.)
4. In the measuring cup, put in the egg and then in the same cup, fill with milk up to the 1 cup line. (If you double this, go up to the 2 cup line.) Then add in the vanilla, and take the whole measuring cup and pour that in with the dry ingredients you'd set aside. Mix well. Note: it will be a bit chunky because of the bits of butter in there; this is perfectly fine!
5. Spread out half the mixture into the greased/floured pan, spreading it evenly across. Then sprinkle half of the streusel topping on top of it. If you want chocolate chips, now is the time to spread them on top of the streusel topping (or else they'll all sink through to the bottom and it's not good when it does that.) Then carefully spread the other half of the batter on top of everything in the pan. This won't be easy as it'll just grab the streusel topping and make things very difficult to spread. It's all right if you don't get the top layer spread from edge to edge. Once you have all the batter in the pan, cover the top with the rest of the topping. (If you wanted, you can pat the whole thing so it's even and flat across, and you can spread the top layer out a bit better too.)
6. Bake for 25-30 minutes or until toothpick clean. Depending on how thick it is, it might take longer.
7. Let cool and enjoy!
(As a note, I recommend doubling this for two pans, or if you have a big rectangular one, but it's up to you.)
