Hey guys, this is a general recipe request. I need to expand my cooking repertoire and figured I'd come to you guys on what you like/know/make often, so.

Only requirements are:
No onions
No mushrooms
Preferably under $20 to make
Can feed a family of four

And if I feel ambitious enough, maybe I'll keep a log of how each one goes. With pictures and stuff. Because that's how I roll or something.

POOR MAN'S STEW:

8 cans beans (mix of them, i.e. kidney, pinto, red, northern white beans, black...whatever you like)
2 cans corn
2 cans diced tomato
1 packet taco seasoning mix
1 packet ranch dressing mix

Pour it all together, heat, let simmer. Can be eaten as soon as it's hot, but there's more flavor if you let it simmer for a while. Once ready to serve, add a little shredded cheese and a dollop or two of sour cream on top.

CHEESEBURGER CASSEROLE

1 pack of ground beef or ground turkey
1 large bag of crinkle-cut fries
1-2 cans of cream of something soup (usually cream of chicken, cream of mushroom, cream of potato...)
1 large bag of shredded cheese

Preheat oven to 350 degrees. Cook the ground beef or ground turkey in a skillet. Once it's done, add it to a casserole dish, pour in the cream of whatever soup, dump in the bag of frozen fries, and add the cheese. Mix it all together, bake for 50-55 min. Voila!

Hamburger pie

1 lb of ground beef
1 can of cream of mushroom soup (I'd imagine this could be substituted for any cream soup, but the mushroom makes it like swiss steak, or maybe a gravy for a substitute.)
Mashed Potatoes (I'd say real and not boxed, but boxed might work?)


cook the ground beef in a skillet and then add the soup just until it's warm. At the same time on the side prepare the mashed potatoes. Once both are done take a casserole pan, or if available, a large oven safe bowl. Pour the soup/beef into the bottom of the pan and then place the mashed potatoes on top. Spread the potatoes out to try to completely cover the soup/beef mixture. Bake in the oven at 350 degrees for about 20 minutes.

add cheese, butter, or sour cream to taste.

I would recommend pretty much anything in the Better Homes and Gardens cookbook. Most of it is relatively easy, cheap, and quick to make (they even have a 20-minute meal section), and it comes in a nifty three-ring binder style so you can leave it open while you cook!

And if you don't mind waiting, I can ask some people today for their favorite recipes, so they'd run the gammut from Jamaican to Spanish to vegetarian to all points in between.

As for me, I like Stuffed Peppers.

Stuffed Peppers
2-4 peppers (red, green, yellow...)
1-1 1/2cup(s) cooked rice (I prefer brown rice)
1lb chicken breast or beef
1 can tomato sauce

First cook the rice. Before the rice is done I slice the peppers in half* vertically and then steam them. Set them aside and cook the chicken/beef in a skillet. Add the cooked rice and 3/4 tomato sauce and heat until mixed. You can also add some spices (I like basil!) if you prefer.

In a pan or oven-safe dish, coat the bottom with the remaining tomato sauce and place the peppers in. Fill the peppers with the rice/meat mix and then heat in the oven at about 350 until warm.



*you don't have to cut them, you can keep them intact and thus give everyone a whole pepper
